Halal butchering and processing methods are available upon request; please note, this process does incur more fees than standard butchering and processing methods.

Steaks

  • Sirloin— Known for their marbling and rich flavor, these tender cuts are  perfect for grilling or pan-searing. They are favorites for steak lovers with the  balance of fat and tenderness.

  • Prime Rib -A leaner cut than Ribeye but still full of flavour, its great for grilling, pan-searing, or broiling. This cut is tender, juicy, and perfect for a classic steak dinner.

  • Blade Steak— A versatile and lean cut, the Sirloin steak is excellent for grilling or stir-frying. It’s a delicious, affordable option that still delivers great taste and tenderness.

Roasts

  • Sirloin or Rib Roast — Perfect for slow-cooking, they becomes incredibly tender and flavorful when braised or cooked low and slow. Ideal for pot roasts, stews, or shredded beef dishes.

  • Brisket — A classic cut for slow-cooking, smoking, or braising. Our grass-fed brisket is flavorful and tender when cooked properly, ideal for barbecuing or making hearty soups and stews.

  • Round Roast — A lean, yet tender roast that’s great for roasting, grilling, or slow-cooking. This cut is versatile and can be used in a variety of dishes, from Sunday roasts to deli-style sandwiches.

Ground Beef

  • Ground Beef — Our ground beef is made from the finest cuts of grass-fed beef. Lean, flavorful, and perfect for burgers, tacos, meatballs, and more, it’s a versatile and healthy choice for everyday meals.

  • Prepared Patties — We also offer pre-formed ground beef patties with our custom orders, ready to grill or pan-sear for a quick and delicious meal. Please note there is an extra charge for patties.

Specialty Cuts

  • Short Ribs — These meaty, flavorful ribs are perfect for grilling, slow-roasting, or braising. They have a rich, beefy flavor that’s perfect for special occasions or a cozy dinner at home.

  • Wing — A lean, flavorful cut that’s perfect for grilling or marinating. Flank steak is ideal for fajitas, stir-frys, or sliced thinly for salads or sandwiches.

  • Striploin  — Known for its rich flavor and tenderness, striploin is perfect for grilling or pan-searing. Great for fajitas, stir-fries, or simply served with a side of roasted vegetables.

  • T-Bone & Porterhouse Steaks — For those who can’t choose between the tenderness of Striploin and the flavor of a tenderloin, the T-bone and Porterhouse cuts offer the best of both worlds. Perfect for grilling or broiling.

Custom Ordering & Scheduling Your Cuts

We understand that everyone’s needs are different, and we’re happy to work with you to customize your beef order. Whether you’re ordering a whole or half cow, or just a few specific cuts, we offer flexible ordering options to suit your preferences.

1. Select Your Package 

a. Quarter Cow — Roughly 100-150lbs of beef; ideal for small families or individuals that want to stock up.

b. Half Cow — Approximately 200-250lbs of beef; great for larger families or those who love to entertain.

c. Whole Cow — Approximately 400-500lbs of beef; for those who prefer to buy in bulk and have a large variety of cuts available for the year.

2. Choose Your Cuts

Complete our custom order form where you can select any of your desired cuts, the thickness of steaks, the size of roasts, etc. Our team can help you choose the perfect cuts based on your preferences and needs.

3. Schedule Your Cut

Once you have selected your cuts and decided on the quantity, we will work with you to schedule the processing of your beef. Timelines will be dependent on availability and the scheduling of other custom orders. We coordinate with our processing partners to ensure that your beef is processed to your specifications.

4. Pickup of Delivery

After your beef is processed and ready, you can either pickup your order directly from our farm or schedule a delivery (location pending). If you would like a delivery quote, please complete this section on the custom order form.

  • Our cattle are 100% grass-fed and grass-finished. In the Winter, when fresh grass is not available, they are fed high-quality hay. This natural, pasture-based diet ensures that our beef is nutrient-dense and free from grains or artificial feed.

  • Yes, we understand the importance of Halal meat for many of our customers, and we are committed to meeting those needs. At North Country Acres, we offer Halal-certified butchering and processing for our beef. We work with a certified Halal butcher who follows strict guidelines to ensure the meat is processed in accordance with Islamic law.

    Our cattle are raised with care, and the Halal slaughtering process ensures that the meat is handled ethically and with respect. The animals are treated humanely throughout the entire process, and all requirements are strictly followed to guarantee the meat is Halal.

    If you would like to order Halal beef, please let us know when placing your order so we can provide a quote, and arrange for the proper butchering and processing. We are committed to providing our community with high-quality, ethically raised, and Halal-certified beef.

  • We offer both pickup and delivery options depending on your location. You can pick up your beef directly from the farm in Marmora, Ontario, or we can arrange for delivery to your home or business (within a specified radius). Delivery fees may apply based on distance, and we’ll provide you with more details when you place your order.

  • When you purchase a quarter, whole, or half beef, the price is based on the dressed weight. This is the weight of the carcass after slaughter and initial processing (before the cuts are made). The dressed weight is typically lower than the live weight due to the removal of the hide, head, hooves, and internal organs.

    To reserve your custom order, just send us a deposit and get ready to enjoy savings on high-quality, pasture-raised beef!

  • When you order a whole or half beef, the total amount of beef you’ll receive is referred to as the cut weight. Typically, about 50% of the cut weight will be ground beef, and the other 50% will be made up of steaks and roasts. This ratio can vary depending on your cutting instructions to the butcher.

    For example, if you prefer to have tougher cuts (like rump roast and round roast) ground into ground beef, you may end up with more than 50% ground beef in your total cut weight.

    If you’re wondering what to do with all that ground beef, you have options! You can ask the butcher for more stewing beef or even get creative and make your own burgers with the extra ground beef.

    Keep in mind that some cuts may be unavailable depending on your selection. For example, if you choose a strip loin and tenderloin, the T-bone will not be available because it contains both of those cuts.
